Solstice is right around the corner, once more. Fruits, roots, leaves and flowers abound and thus, the kitchen is moving non-stop. This weekend, I bought an herb, called papalo. Its flavor is bright and awakening, perfect for a fresh salsa for crepes. It is common in Mexico and is renowned for making tacos utterly amazing.

Rainbow Mung Bean Crepes
stuffed with a dressed salad of quinoa, strawberries, spearmint, raisins, carrots, purple cabbage, calendula and borage flowers, with papalo salsa over the top.
$7 ea.

Dream Burger
a roasted quinoa shiitake bean beet patty served with a slice of cashew cheddar, basil pesto, lettuce, and radish, sandwiched in a toasted sesame bun.
$8 ea.

Spiral Vegetable Tartes
thinly sliced zucchini, beet, and carrot, brushed in olive oil, spiraled over a layer of roasted pumpkin, sage and garlic, and baked.
