Y’all, the spiral vegetable tartes.
An innovative video recipe circulated through my social media streams a couple of moths ago and I recalled its brilliance when reviewing what I had bought at the market. This is what chefs do, I’ve realized; after taking inventory, they mentally search their repertoire and studies for ideas on how to use what they have, and, by substituting for ingredients they don’t have, new recipes emerge.
Summer Vegetable Spiral Tarte
A complex spiral of thinly sliced Zucchini, Carrots, and Beets, roasted with Olive Oil and Thyme, set over a thin layer of Pumpkin purée, baked in a crust. Served with a small scoop of Peach Basil Salsa on top. $7 ea.
Mung Bean Crepe
with a grilled Sunburst Squash Shiitake salad served with Lettuce and Peach Basil Salsa. $7 ea.
